Healthy Homemade Veg Quesadilla Recipe

Veg Quesadilla Recipe
Serves 2
Ingredients
4 small rotis or tortillas (made with whole wheat flour), each 5-inch in diameter
1 big potato
2/3rd cup corn kernels
2 Tbsp Rajma (boiled)
1-2 tsp. Feta cheese
Ingredients for Stuffing
1 Onion
1/2 Bell pepper (Capsicum)
1/2 Carrot
5 Garlic flakes
Method
- Boil potato and corn separately
- Chop all the stuffing ingredients finely
- Heat 2 tsp. oil and saute all stuffing ingredients – garlic, onion, bell pepper, carrot.
- Add chili flakes and salt.
- De-skin the boiled potato and grate it into the mixture.
- Add grated feta cheese and mix well. The filling is ready so switch off the flame and keep aside.
- Heat a pan and place 4 small rotis/ tortillas on it. Cook slightly on both sides. Remove from pan and keep aside.
- Apply green coriander chutney and a sauce made by mixing 1 Tbsp. veg mayo with 1 Tbsp. of tomato chili sauce on top of all 4 rotis.
- Take 2 Tbsp filling (cooked stuffing) and place on half side of all four rotis/ tortillas.
- Add Boiled Rajma on top and fold the tortilla in half. Repeat for the other 3 tortillas.
- Heat a nonstick pan. Place all 4 tortillas on the heated pan on a low flame.
- Lightly brush butter on top of the 4 folded tortillas.
- Flip carefully to ensure that the filling doesn’t fall out. Allow to cook on the other side. It should become crispy. Make sure they dont get burnt.
